Here's a leaner,
harder-edged Sauvignon Blanc with elderflower and grassy aromas and flavours.
Pair with an omelet with fresh goat cheese, onion and asparagus or grilled

| 2001 | grapes were hand
harvested on the 23rd of September and had 12 hours of skin contact /
fermentation took place in stainless steel tanks and was slow and cool
to maintain fresh varietal character / the wine was kept on the lees for
3 months / 20% of the wine underwent malolactic conversion
tasting notes
at bottling the 2001 vintage produced some ripe flavours of guava and passion fruit along with the more typical greener fruit like gooseberry, some herbal notes can be found on the finish / the wine is well-balanced with a lively, crisp acidity |

grapes were hand-harvested while the vines were under some stress at harvest
due to lack of rain / the first of three harvest dates for this vintage
was September 23rd / at the first harvest date, the grapes had lower brix
and higher acidity / the next two harvest dates were at higher brix levels
and the grapes had much more fruit flavour
each harvest was fermented
separately and blended at first racking / the wine was aged in stainless
steel tanks until bottling in early spring

at bottling the wine has a wonderful fresh nose - delicate citrus and fresh wild flowers with sweet, cooked gooseberry / the palate has lemon/lime freshness and there are more green, grassy notes and some mineral tones on the finish |

the big, grassy, herbaceous style of Sauvignon that's popular today - but
has the pure, more mineral style of Sancerre. What the French call classic.

Early Summer 2003 This is more akin to the Sancerre style of sauvignon blanc with elegant and crisp fruit with delicate floral and mineral notes.
