Marinated Goat Cheese and Roasted Pepper Appetizer |

1 and 1/2 cups olive oil 3/4 log plain goat cheese cut into 5 or 6 slices 2-3 peeled garlic cloves 1 tsp whole peppercorns |
2-3 sprigs fresh rosemary 4-5 sprigs fresh thyme 2-4 dried chilies |
Place cheese slices carefully in one or two jars (whatever fits best). Place the other ingredients around the cheese carefully. Cover everything with olive oil and leave out on the kitchen counter for 2 or 3 hours, then refrigerate for about 1 week before using. Once you have made the marinated goat cheese, you can incorporate it into the following appetizer: |

3-4 tbsps fresh basil 1 large baguette |
