2002 grapes were harvested in perfect condition, then crushed, detstemmed and cold soaked for 5 days prior to fermentation with selected yeasts / the cap was punched down three times daily during fermentation / the wine was pressed as fermentation neared completion / the wine was racked in to new Canadian oak barrels where it underwent malolactic fermentation / the wine spent 13 months in barrel and was fined with egg whites prior to being bottled unfiltered

dark purple colour / intense bouquet of ripe dark fruit with cedar and hints of tobacco and freshly ground coffee / the wine is full bodied with flavours of sweet black cherry and raspberry and well integrated oak, cedar and liquorice / savoury tannins extend from the mid palate throught the lengthy finish

A gorgeous Cabernet Franc with the perfume and intense fruit typical of Niagara's best examples. The aromas range from raspberry to cedar to tobacco leaf. On the palate, the full-bodied wine exhibits a similar spectrum of flavours with added complexity from some anise notes.
